Vegan Mac and Cheese

Ingredients

  • 1 cup banza pasta (half elbows, half gemelli)
  • 1 cup sweet potato cubes (diced and steamed)
  • 1/2 cup milk of choice
  • 1 tbsp olive oil
  • 1 clove garlic (minced)
  • 1 tsp onion powder
  • 1/4 tsp smoked paprika
  • 1 tbsp nutritional yeast
  • 1 tsp miso paste
  • salt and pepper to taste
  • juice of 1/4 lemon

Optional

  • 1/4 cup shredded vegan cheddar
  • florets of 1 small broccoli head (steamed)

Preparation

  1. Cook pasta 1-2 minutes less than directed on the packaging.

  2. Combine all ingredients in a blender, except the cheese if using.

  3. Add the sauce to the cooked pasta along with the shredded cheese.

  4. Cook on low to medium heat until the cheese is melted and combined.

  5. Optionally, serve with broccoli and enjoy.
