Vegan Cauliflower Mac and Cheese
Ingredients
- 1 head cauliflower broken into chunks and several smaller pieces
- 2 tbsp olive oil
- Pinch chili flakes
- 1/2 small onion
- 1 large clove garlic
- 1/2 lemon juiced
- 1 tsp Dijon
- 1 tbsp turmeric
- 1/4 tsp cayenne
- 1/2 tsp smoked paprika
- 1/4 tsp ground nutmeg
- 2 heaping tbsp nutritional yeast
- 1/2 tsp salt & cracked pepper
- 3/4-1 cup pasta water
- 1 cup frozen peas
- Pasta
Preparation
Preheat oven to 350F. Place smaller cauliflower pieces on baking sheet and drizzle with olive oil and sprinkle with sea salt.
Steam remaining large chunks of cauliflower.
Cook pasta, reserving 1 cup of water.
Once steamed cauliflower is fork tender, add to blender.
Sauté chili flakes, onion and garlic and add to blender.
Add in remaining ingredients except for pasta water and peas. Blend sauce until creamy.
Thin out sauce with pasta water to your desired consistency.
Place peas into pan, add pasta and 2 cups of sauce and toss to combine.
Check for seasoning.
Place roasted cauliflower on top to garnish.
