Cauliflower Mac and Cheese
Ingredients
- pasta (such as macaroni)
- chopped vegetables (e.g., carrot and broccoli)
Cauliflower cheese sauce
- 2 cups steamed cauliflower
- 1/4 cup nutritional yeast
- 2 tablespoons tahini
- juice of one lemon
- 1 tablespoon dijon mustard
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1/4 teaspoon salt
- 1/2 to 3/4 cup vegetable stock
Preparation
Cook the pasta according to package instructions with chopped vegetables added to the water, such as carrot and broccoli.
Add the sauce ingredients to a high-speed blender and blend until smooth and creamy.
Drain the pasta and vegetables, then mix with the sauce.
