Cauliflower Mac and Cheese

Ingredients

  • pasta (such as macaroni)
  • chopped vegetables (e.g., carrot and broccoli)

Cauliflower cheese sauce

  • 2 cups steamed cauliflower
  • 1/4 cup nutritional yeast
  • 2 tablespoons tahini
  • juice of one lemon
  • 1 tablespoon dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/4 teaspoon salt
  • 1/2 to 3/4 cup vegetable stock

Preparation

  1. Cook the pasta according to package instructions with chopped vegetables added to the water, such as carrot and broccoli.

  2. Add the sauce ingredients to a high-speed blender and blend until smooth and creamy.

  3. Drain the pasta and vegetables, then mix with the sauce.
