Vegan Mac and Cheese

Ingredients

  • 1 cup of macaroni pasta
  • 1 cup of cashews
  • 1 carrot
  • 1 potato
  • 1/4 cup of nutritional yeast
  • 2 tablespoons of lemon juice
  • 1/2 teaspoon of garlic powder
  • 1/2 teaspoon of onion powder
  • 1/4 teaspoon of turmeric
  • 1/4 teaspoon of paprika
  • salt and pepper to taste

Preparation

  1. Cook the macaroni pasta according to package instructions until al dente

  2. While pasta is cooking, boil or steam the carrot and potato until soft and tender

  3. In a blender, combine cashews, cooked carrot, cooked potato, nutritional yeast, lemon juice, garlic powder, onion powder, turmeric, paprika, salt, and pepper; blend until smooth to make the sauce

  4. Drain the cooked pasta, then mix it with the blended sauce until well coated

  5. Serve immediately, optionally garnished with additional seasonings or herbs
