Fresh Vegan Spring Rolls with Lime Dressing

Ingredients

  • mango
  • rice noodles
  • baked tofu
  • red pepper
  • greens
  • cilantro
  • rice paper roll

Dressing components

  • Juice of 1 lime
  • 1/4 cup fresh basil, packed
  • 1/2 cup canned white beans, rinsed and drained
  • 1 tbsp rice vinegar
  • 1/2 tsp garlic powder
  • 1 small shallot, cut into chunks
  • 1/2 cup water
  • Pinch of salt

Preparation

  1. Stuff mango, rice noodles, baked tofu, red pepper, greens, and cilantro into a rice paper roll and roll it up to enjoy.

  2. For the lime basil dressing, add all ingredients to a blender and blend until smooth.

  3. Adjust the dressing thickness with additional water and taste by adjusting salt or garlic to preference.
