Fresh Vegan Spring Rolls with Lime Dressing
Ingredients
- mango
- rice noodles
- baked tofu
- red pepper
- greens
- cilantro
- rice paper roll
Dressing components
- Juice of 1 lime
- 1/4 cup fresh basil, packed
- 1/2 cup canned white beans, rinsed and drained
- 1 tbsp rice vinegar
- 1/2 tsp garlic powder
- 1 small shallot, cut into chunks
- 1/2 cup water
- Pinch of salt
Preparation
Stuff mango, rice noodles, baked tofu, red pepper, greens, and cilantro into a rice paper roll and roll it up to enjoy.
For the lime basil dressing, add all ingredients to a blender and blend until smooth.
Adjust the dressing thickness with additional water and taste by adjusting salt or garlic to preference.
