Refreshing Mango Chickpea Popsicles with Coconut

Ingredients

  • 1/2 cup cooked chickpeas and skin taken off
  • 1-11/2 cups reduced mango
  • 3 tbsp tahini/cashew butter
  • 2 teaspoons vanilla extract
  • 1 cup thick coconut milk
  • 6 tablespoons maple syrup or honey
  • Pinch of salt

Preparation

  1. Chuck everything into a blender and blend until completely smooth.

  2. Pour into moulds and freeze until solid.

Tips

  1. Removing the chickpea skin removes any residual flavour in the chickpeas if any. Little time consuming but totally worth it.

  2. You can use cashew butter instead of tahini if you believe in heat producing food like, both mango and sesame are heaty. You can make the choice based on what suits you.
