Mango Chickpea Popsicles

Ingredients

  • 1/2 cup cooked chickpeas and skin taken off
  • 1-11/2 cups reduced mango (this will prevent icyness in the pop and make the mango flavour more pronounced)
  • 3 tbsp tahini/cashew butter (both of them work very well)
  • 2 teaspoons vanilla extract
  • 1cup thick coconut milk (from the can preferred)
  • 6 tablespoons maple syrup or honey
  • Pinch of salt

Preparation

  1. Chuck everything into a blender and blend until completely smooth

  2. Pour into moulds and freeze until solid
