Mouthwatering Mango Sago Pudding

Ingredients

  • 3 ripe mangoes, peeled + diced
  • 1 cup small tapioca pearls
  • 8 cups water
  • 3 tbsp cane sugar
  • 1 can of coconut milk

Preparation

  1. Pour 8 cups of water in a saucepan and let it boil

  2. Then chuck in the tapioca pearls to cook for 15 min or until they turn translucent

  3. Stir the mixture in intervals to stop the pearls from sticking together

  4. Strain the sago pearls and rinse them thoroughly to cool them off

  5. Take a measuring cup to mix milk with sugar

  6. Stir it until the sugar dissolves

  7. Drain the sago pearls and then add them into the sugared milk

  8. Pop it in the fridge to set, around 2-3 hours

  9. Set aside a cup of diced mangos for garnish

  10. Then blend the rest in a high-speed blender to make mango puree

  11. Scoop the silky smooth puree in a serving bowl/glass

  12. Add the tapioca layer and top it with mango cubes

  13. Enjoy!
