Simple Vegan Pasta Sauce with Mushrooms
Ingredients
- 1 red bell pepper
- 2 roma tomatoes
- 1 garlic clove
- 2-3 chipotle adobo sauce
- 1 Tbsp olive oil (optional)
- pinch of basil
- 1/4 onion (for blender)
- 8-10 mushrooms
- 1/3 cup pecans finely chopped
- 1/4 onion (for sauté)
Preparation
In a blender, add 1 red bell pepper, 2 roma tomatoes, 1 garlic clove, 2-3 chipotle adobo sauce, 1 Tbsp olive oil (optional), pinch of basil, and 1/4 onion; blend until smooth.
In a pan, sauté 8-10 mushrooms, 1/3 cup finely chopped pecans, and 1/4 onion.
Pour the blended sauce over the sautéed mixture.
Bring to a boil and reduce heat to achieve desired consistency, such as marinara type.
Pour over cooked pasta and enjoy warm.
