Simple Vegan Pasta Sauce with Mushrooms

Ingredients

  • 1 red bell pepper
  • 2 roma tomatoes
  • 1 garlic clove
  • 2-3 chipotle adobo sauce
  • 1 Tbsp olive oil (optional)
  • pinch of basil
  • 1/4 onion (for blender)
  • 8-10 mushrooms
  • 1/3 cup pecans finely chopped
  • 1/4 onion (for sauté)

Preparation

  1. In a blender, add 1 red bell pepper, 2 roma tomatoes, 1 garlic clove, 2-3 chipotle adobo sauce, 1 Tbsp olive oil (optional), pinch of basil, and 1/4 onion; blend until smooth.

  2. In a pan, sauté 8-10 mushrooms, 1/3 cup finely chopped pecans, and 1/4 onion.

  3. Pour the blended sauce over the sautéed mixture.

  4. Bring to a boil and reduce heat to achieve desired consistency, such as marinara type.

  5. Pour over cooked pasta and enjoy warm.
