Sour Curry of Jackfruit and Mixed Vegetables

Ingredients

  • 3 cups veg stock
  • 10 green beans topped and tailed then broken in half⁣
  • handful of daikon mat⁣
  • half a tin of young jackfruit washed to remove brine⁣
  • 1 tsp of sugar ⁣
  • 3 tbs Tamarind puree⁣
  • 1 tbs Light soy sauce⁣

Preparation

  1. For the curry paste: 6 dried chillis (Thai preferably but any long dried chilli will do!) , 3 Thai shallot (can sub for 0.5 banana shallot, or 1 french shallot)⁣, 1 inch piece of galangal, chopped⁣, 1 6x4 inch sheet of kelp (optional), about a teaspoon of salt

  2. Add all the curry paste ingredients into mortar and pestle and pound into a paste. Can use blender or food processor but M&P will give you better results⁣

  3. In a pot bring stock to boil - season with sugar. Add jackfruit and simmer for 5 - 10 minutes⁣

  4. Add daikon, green beans to stock. Then tamarind puree and soy sauce and mix well. ⁣
