Super Tangy Brinjal and Mango Thokku Spread

Ingredients

  • 6-8 brinjals
  • 1 raw mango
  • 1 tablespoon cumin
  • 1 tablespoon coriander
  • 1 tablespoon sesame seeds
  • 1 tablespoon urad dal
  • 1 tablespoon chana dal
  • 5-6 garlic pods
  • 10-15 dry red chillies
  • Oil (amount not specified)
  • Salt (amount not specified)

Preparation

  1. Roast all the ingredients and set aside.

  2. Add more oil to the same kadai, then add chopped brinjals and cook for 5-6 minutes.

  3. Add chopped mango along with some salt and cook for another 5 minutes.

  4. Cool down and blend into chutney.

  5. Give some simple tadka and the chutney is ready.
