Super Tangy Brinjal and Mango Thokku Spread
Ingredients
- 6-8 brinjals
- 1 raw mango
- 1 tablespoon cumin
- 1 tablespoon coriander
- 1 tablespoon sesame seeds
- 1 tablespoon urad dal
- 1 tablespoon chana dal
- 5-6 garlic pods
- 10-15 dry red chillies
- Oil (amount not specified)
- Salt (amount not specified)
Preparation
Roast all the ingredients and set aside.
Add more oil to the same kadai, then add chopped brinjals and cook for 5-6 minutes.
Add chopped mango along with some salt and cook for another 5 minutes.
Cool down and blend into chutney.
Give some simple tadka and the chutney is ready.
