Vegan Garlic and Herb Cream Cheese

Ingredients

  • 200g firm tofu
  • 4 tbsp plant milk
  • 2 tbsp lemon juice
  • 2 tbsp olive oil
  • 2 tbsp chives, finely chopped
  • 1 tbsp nutritional yeast
  • 1/2 tsp garlic granules
  • salt and pepper to taste

Preparation

  1. Drain the tofu and ensure it is dry, using a cheese cloth or tea towel if necessary.

  2. Place the tofu, lemon juice, nutritional yeast, plant milk, and olive oil in a blender and blend for about 30 seconds or until desired consistency.

  3. Stir in the chives, garlic granules, salt, and pepper. Taste and adjust seasoning if required.

  4. This recipe is customizable; for a spicy version, swap garlic and herbs for a sprinkling of chilli flakes.
