Creamy Avocado Truffle Linguini
Ingredients
Sauce
- 2 cups basil
- Handful baby spinach
- 1/4 cup hemp seeds
- 1/3 cup olive oil
- 1/4 an avocado
- 1/2 tablespoon truffle oil
Other
- Plant-based linguini
- A couple of handfuls of baby spinach
- Nutritional yeast
- Salt and pepper
Preparation
Put all the ingredients for the sauce in a blender at high speed
Follow directions on box for pasta
Cook baby spinach in another pan with water
Strain pasta
Add a couple spoonfuls of sauce, baby spinach, nutritional yeast, salt and pepper to pasta and mix
