Creamy Avocado Truffle Linguini

Ingredients

Sauce

  • 2 cups basil
  • Handful baby spinach
  • 1/4 cup hemp seeds
  • 1/3 cup olive oil
  • 1/4 an avocado
  • 1/2 tablespoon truffle oil

Other

  • Plant-based linguini
  • A couple of handfuls of baby spinach
  • Nutritional yeast
  • Salt and pepper

Preparation

  1. Put all the ingredients for the sauce in a blender at high speed

  2. Follow directions on box for pasta

  3. Cook baby spinach in another pan with water

  4. Strain pasta

  5. Add a couple spoonfuls of sauce, baby spinach, nutritional yeast, salt and pepper to pasta and mix
