Creamy Mushroom Pasta

Ingredients

  • spaghetti
  • 1/2 pack of mushrooms
  • 1 red onion
  • 1/2 pint of veg stock
  • 1/4 tsp smoked paprika
  • 1/2 tsp of paprika
  • 1/4 tsp of cayenne pepper
  • salt and pepper
  • 50ml of vegan cream
  • 2 cloves of garlic
  • garden peas

Preparation

  1. Fry one chopped red onion in olive oil for about 5 mins

  2. Add mushrooms and fry for 3-5 mins

  3. Add garlic and fry for 1 min

  4. Add smoked paprika, paprika, cayenne pepper (optional) and season

  5. Add veg stock and simmer for about 10 mins- you might want to add more water if it evaporates too much. Put your pasta on to cook at this stage

  6. Add your peas and cook for another 3 mins

  7. Add soy cream and then mix in your pasta

  8. Season to taste n serve
