Creamy Mushroom Pasta
Ingredients
- spaghetti
- 1/2 pack of mushrooms
- 1 red onion
- 1/2 pint of veg stock
- 1/4 tsp smoked paprika
- 1/2 tsp of paprika
- 1/4 tsp of cayenne pepper
- salt and pepper
- 50ml of vegan cream
- 2 cloves of garlic
- garden peas
Preparation
Fry one chopped red onion in olive oil for about 5 mins
Add mushrooms and fry for 3-5 mins
Add garlic and fry for 1 min
Add smoked paprika, paprika, cayenne pepper (optional) and season
Add veg stock and simmer for about 10 mins- you might want to add more water if it evaporates too much. Put your pasta on to cook at this stage
Add your peas and cook for another 3 mins
Add soy cream and then mix in your pasta
Season to taste n serve
