Homemade Vegan Polish Pierogies
Ingredients
Dough
- 2 cups all-purpose flour
- 1/2 cup warm filtered water
- 1/4 cup coconut oil
- 1 tsp salt
Filling
- Boiled potatoes
- Shredded vegan cheddar cheese
Toppings
- Browned onions
- Vegan bacon
- Sliced green onion
- Vegan sour cream
Preparation
Combine the dough ingredients in a medium-sized bowl. Knead well until dough forms, adding more water if needed. Cover the bowl and place it in the fridge for 30 minutes.
Boil potatoes until tender Then, smash them until broken down into small pieces, season with a little sea salt, and combine with shredded vegan cheddar cheese.
Remove the dough from the fridge when ready. Sprinkle flour onto a surface and roll out the dough into a thin sheet.
Use a glass rim or cookie cutter to cut the dough into circles. In a large pot, bring water to a boil.
Add a spoonful of the cheese and potato mixture onto one side of each dough circle. Fold over and press sealed with a fork and a bit of water, repeating the process until all pierogies are made.
Once the water is boiling, place the pierogies in the pot and cook until they float to the surface. Remove them and fry in a cast iron pan on medium heat for 2 minutes on each side.
Prepare the toppings by pan-searing the yellow onions until browned, cooking the vegan bacon until crisp, slicing the green onions, and having vegan sour cream ready Serve the pierogies with these toppings and garnish with black pepper.
