I’ve Made Cauliflower Mashed Potatoes

Ingredients

  • I’ve made cauliflower mashed potatoes before but I think I made my best ones last night. I put five small peeled gold potatoes into a pot of water along with the florets from an entire head of cauliflower and a tablespoon of @mccormickspice garlic pepper seasoning. Boil on high heat. Once the potatoes were soft enough to split with a spoon, drain water and add vegetables back to pot. Added a splash of @califiafarms unsweetened almond milk (there’s enough moisture in the cauliflower so you only need a splash) and two-three tablespoons @countrycrock plant butter (or favorite vegan butter). Use a potato masher until the desired consistency has been reached. Season with salt and pepper. I served them alongside sautéed green beans and #organic crimini mushrooms and a few pieces of air-fried @betterchew fried chick’n. So good! ∘
