Cauliflower and Potato Mash with Garlic Pepper

Ingredients

  • 5 small peeled gold potatoes
  • Florets from 1 head cauliflower
  • 1 tablespoon garlic pepper seasoning
  • Splash of unsweetened almond milk
  • 2-3 tablespoons plant butter
  • Salt and pepper to taste

Preparation

  1. Put five small peeled gold potatoes, cauliflower florets, and a tablespoon of garlic pepper seasoning into a pot of water.

  2. Boil on high heat until potatoes are soft enough to split with a spoon.

  3. Drain the water and add the vegetables back to the pot.

  4. Add a splash of unsweetened almond milk and 2-3 tablespoons of plant butter.

  5. Mash with a potato masher until desired consistency is reached.

  6. Season with salt and pepper to taste.

  7. Note that there's enough moisture in the cauliflower, so only a splash of almond milk is needed.
