Oyster Mushrooms and Brown Lentil Curry

Ingredients

  • sunflower oil
  • 1.5 cups brown lentils
  • one handful of oyster mushrooms
  • 1 can full fat coconut milk
  • 4 tomatoes
  • 4 green chili peppers
  • 1 small onion
  • garlic
  • cumin seeds
  • turmeric
  • coriander powder
  • hot curry powder
  • onion powder
  • chili powder
  • salt

Preparation

  1. Soak the lentils before cooking.

  2. Submerge the mushrooms in hot water just enough to cover and leave to rehydrate for 15-20 minutes.

  3. In a pot, add cumin seeds, diced onions and garlic and fry with a little oil.

  4. Toss in the spices and keep frying.

  5. Add diced tomatoes and chili pepper.

  6. After a little while add mushrooms and the water and leave to boil.

  7. Add the lentils, coconut milk and more spices.

  8. Keep the lid open until it boils, then reduce the heat and cover it and leave it to cook for 45 minutes.

  9. Just before the 45 minutes are up, taste it and add spices if needed.

  10. Add salt and leave to cook until the time is up.
