Smoky Bacon, Mushroom, and Tomato Spaghetti

Ingredients

  • 400g spaghetti
  • 1 tbsp olive oil
  • 120g smoked streaky bacon, sliced into thin strips
  • 1 onion, finely chopped
  • 1 garlic clove, finely chopped
  • 500g mushrooms, thinly sliced
  • 2 tsp sweet smoked paprika
  • 2 x 400g cans chopped tomatoes

Preparation

  1. Boil a pan of water and cook the spaghetti according to the pack instructions.

  2. Meanwhile, heat the oil in a large non-stick pan and cook the bacon for 3 minutes until it starts to crisp. Stir in the onion and garlic and cook for another 3 minutes, then add the mushrooms and smoked paprika, and cook for another minute.

  3. Pour in the chopped tomatoes, bring to a boil, and simmer for 5 minutes until thickened. Drain the pasta and toss with the sauce.
