Vegan Pasta Bolognese
Ingredients
- pasta
- 3 garlic cloves
- 1 red onion (diced)
- oil
- vegan soy mince
- chickpeas
- 1tbsp soy sauce
- 1tbsp vegetable fond
- cocktail tomatoes
- parlsey
- salt
- black pepper
- tomato paste and 600ml ctushed tomatoes
- sundried tomatoes
- some oat cooking cream
- parsley
- salt and black pepper
- broccoli
Preparation
In a frying pan, fried 3 garlic cloves, 1 red onion (diced) in some oil until brown. Then I added vegan soy mince along with chickpeas. I added 1tbsp soy sauce, 1tbsp vegetable fond, cocktail tomatoes, parlsey, salt, black pepper, tomato paste and 600ml ctushed tomatoes. I let it simmer on medium heat for around 30 minutes before adding the sundried tomatoes (& a little of the oil), some oat cooking cream as well as more parsley, salt and black pepper. Then folded in the pasta
Allow to simmer for a few minutes so the pasta soaks up the sauce and then it's just to eat and enjoy. Example with a side salad or some broccoli
