Amazing Chickpea Blondies with Almond Flour

Ingredients

  • 1 can chickpeas, drained and rinsed
  • 1/2 cup almond butter
  • 1/2 cup maple syrup
  • 2 tsp vanilla
  • 1/4 cup almond flour
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 1/2 cup chocolate chips

Preparation

  1. In a blender or food processor, add the ingredients and mix until combined.

  2. Fold in 1/2 cup chocolate chips.

  3. Pour the mixture into a greased loaf pan and top with additional chocolate chips.

  4. Bake at 350°F for 25-30 minutes.

  5. Cool for at least 30 minutes before slicing; this step is important to avoid crumbling.

  6. Store in the refrigerator to keep the blondies firm.
