Baked Oats

Ingredients

  • 75g oats
  • 2 overripe bananas (one is for topping)
  • 2 handfuls walnuts, crushed in your hands
  • handful sunflower seeds
  • handful of raisins -these go so plump & juicy
  • 2 handfuls blackberries (or raspberries or bluebs work well)
  • 7 tbsp almond (or other ) mylk
  • 1 tsp vanilla
  • 2 tsp cinnamon
  • optional 2 tbsp maple syrup

Preparation

  1. Soak your oats in boiling water enough just to cover & preheat your oven to 180*

  2. Meanwhile mash one of the bananas in to a bowl and add all of the other ingredients

  3. Once the oats have soaked all the water (about the time it takes your oven to warm, convenient hey! ), stir through the mix

  4. Add to a ovenproof dish and top with the extra banana, and extra seeds & nuts for crunch

  5. Cook for 25 mins until lovely & bubbly

  6. Mix a few tbsp tahini with a spoonful of creamy yoghurt and 1/2 tsp vanilla extract

  7. Loosen with dashes of almond mylk as needed

  8. To give it a more custard-y colour you can add a PINCH of turmeric
