Chocolate Peanut Butter Overnight Oats

Ingredients

  • 1/2 cup rolled oats
  • 1 tbsp chia seeds
  • 1 tbsp dark cocoa powder
  • 1 tbsp peanut butter
  • 1-2 tsp sweetener of choice (e.g., brown sugar)
  • 3/4 cup unsweetened soy milk
  • Pinch of cinnamon
  • Pinch of salt

Toppings

  • caramelized banana
  • pepitas
  • cacao nibs
  • cashew yogurt (e.g., Forager Project)
  • date syrup

Preparation

  1. Mix together dry ingredients in a bowl.

  2. Add in peanut butter and milk and mix well to combine.

  3. Allow to sit in the fridge for at least an hour or overnight.

  4. Mix well and adjust consistency if desired with additional milk if needed.

  5. Note: Pinch of salt is not optional as it really makes a difference.

Serving

  1. Top with caramelized banana, pepitas, cacao nibs, cashew yogurt, and date syrup.
