Coconut and Lentil Dal

Ingredients

  • 400g dry green lentils
  • 2 x 400 ml tins coconut milk
  • 3 cloves garlic
  • 2 large tomatoes
  • 1 teaspoon ground cumin
  • 1 teaspoon curry powder
  • 1 teaspoon paprika
  • 1 teaspoon chilli flakes (optional)
  • Salt and pepper to taste

Preparation

  1. Finely chop the garlic and chop the tomatoes into small pieces

  2. Heat a little oil in a large pot over medium heat

  3. Add the chopped garlic and sauté for 1-2 minutes until fragrant

  4. Stir in the cumin, curry powder, paprika, and chilli flakes

  5. Add the lentils, coconut milk, chopped tomatoes, salt, and pepper

  6. Bring to a boil, then reduce heat and simmer for 20-30 minutes until lentils are tender
