Coconut and Lentil Dal
Ingredients
- 400g dry green lentils
- 2 x 400 ml tins coconut milk
- 3 cloves garlic
- 2 large tomatoes
- 1 teaspoon ground cumin
- 1 teaspoon curry powder
- 1 teaspoon paprika
- 1 teaspoon chilli flakes (optional)
- Salt and pepper to taste
Preparation
Finely chop the garlic and chop the tomatoes into small pieces
Heat a little oil in a large pot over medium heat
Add the chopped garlic and sauté for 1-2 minutes until fragrant
Stir in the cumin, curry powder, paprika, and chilli flakes
Add the lentils, coconut milk, chopped tomatoes, salt, and pepper
Bring to a boil, then reduce heat and simmer for 20-30 minutes until lentils are tender
