Edamame Kale Cranberry Salad

Ingredients

  • 1 bunch of kale, finely chopped
  • 1 cup edamame beans, cooked and cooled
  • 1 large carrot, shredded
  • 1/2 cup dried cranberries
  • 1/3 cup pumpkin seeds
  • 1/4 cup green onion, finely sliced
  • 3 tbsp parsley, finely chopped
  • 1 tbsp mint, finely chopped

Preparation

  1. For the dressing: 1/4 cup vegan mayonnaise, 2 tbsp olive oil, 1 tbsp lemon juice, 1/2 tbsp maple syrup, 1 tbsp apple cider vinegar, 1/2 tsp dijon mustard, a pinch of salt & pepper

  2. Whisk all dressing ingredients together and thin out with a bit of water

  3. Toss dressing with salad ingredients and let sit in the fridge for a few hours to absorb the flavour. The longer it sits the better
