Fall Salad with Pumpkin Tahini Dressing

Ingredients

  • arugula or kale
  • red onions
  • greens
  • pumpkin seeds
  • butternut squash

Dressing

  • 3 tbsp pumpkin purée
  • 2 tbsp tahini
  • 1/2 cup water
  • juice of 1 lemon
  • sea salt
  • black pepper

Preparation

  1. Bake the butternut squash until tender and cube it

  2. In a small bowl, whisk together pumpkin purée, tahini, water, lemon juice, sea salt, and black pepper to make the dressing

  3. In a large salad bowl, combine arugula or kale, red onions, greens, pumpkin seeds, and the baked butternut squash

  4. Drizzle the dressing over the salad and toss gently to coat
