Fall Salad with Pumpkin Tahini Dressing
Ingredients
- arugula or kale
- red onions
- greens
- pumpkin seeds
- butternut squash
Dressing
- 3 tbsp pumpkin purée
- 2 tbsp tahini
- 1/2 cup water
- juice of 1 lemon
- sea salt
- black pepper
Preparation
Bake the butternut squash until tender and cube it
In a small bowl, whisk together pumpkin purée, tahini, water, lemon juice, sea salt, and black pepper to make the dressing
In a large salad bowl, combine arugula or kale, red onions, greens, pumpkin seeds, and the baked butternut squash
Drizzle the dressing over the salad and toss gently to coat
