Ingredients

  • 1 pack of lightlife ground crumbles (or if your going soy-free option you can use beyond)
  • 1/2 cup brown sugar, lightly packed
  • 1/4 cup light soy sauce
  • 1 tablespoon sesame oil
  • 1 large onion, thinly sliced
  • 2 tbsp fresh garlic minced
  • 2 tablespoons fresh ginger minced >1 teaspoon dried red chili flakes
  • 1/2 teaspoon ground black pepper
  • 2 teaspoon sesame seeds
  • 2 cups basmati rice
  • 4 cups water for rice >1 stalk of green onions sliced diagonal >10 ish pieces of bella mushrooms whole
  • 1 head of broccoli cut into florets
  • 1 tbsp salt, dash of black pepper, garlic powder and crushed pepper for veggies >2 tbsp olive oil for bugogi and 2 for veggies

Preparation

  1. Preheat the oven to 425•deg f

  2. Carefully cut the broccoli into florets while keeping a small bit of the stem attached

  3. Toss with mushrooms in a mixing bowl with olive oil, salt and pepper, crushed red pepper and garlic powder

  4. Roast for about 15 mins

  5. It’s good to have a small crunch on the broccoli

  6. In a skillet, over medium heat, sauté the onions in olive oil until slightly caramelized; add the garlic and meatless crumbles and continue to sauté for another 5 minutes

  7. In a cup or separate bowl add the soy sauce, sesame oil, ginger, dried red chili flakes, ground black pepper, and brown sugar

  8. Stir well into the crumbles

  9. Continue to sauté until all of the liquid is absorbed

  10. Should t take too long but i keep it just a lil wet so it’s a lil saucy for the rice :)

  11. Add in the sesame seeds and stir to incorporate

  12. Serve over cooked rice and roasted veggies and top with sliced green onions, sesame seeds
