Harvest Rice Bowl with Glazed Sweet Potatoes

Ingredients

Glazed sweet potatoes

  • 1 medium sweet potato
  • 1 tbsp brown sugar
  • 1 tbsp olive oil
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/4 tsp ground pepper

Massaged kale

  • 2 handfuls kale
  • 1 tsp olive oil
  • Juice from 1/2 lemon
  • Salt and pepper to taste

Additional components

  • Crispy baked chickpeas
  • RightRice Holiday Stuffing
  • Chopped toasted almonds
  • Balsamic vinegar

Preparation

  1. Toss chopped sweet potatoes in brown sugar, olive oil, Italian seasoning, salt, and pepper.

  2. Bake sweet potatoes at 425 degrees for 25 minutes until golden brown and crispy.

  3. Massage kale with olive oil, lemon juice, salt, and pepper.
