Hearty Vegan Chili with Vegetables

Ingredients

  • Vegan ground beef
  • Cooked lentils
  • Red onion
  • Garlic
  • Eggplant
  • Red & yellow bell pepper
  • Sweet potato
  • Ground cumin, coriander and smoked paprika
  • Pepper and salt
  • Tomato paste
  • Water
  • Fresh coriander
  • Avocado
  • Lime juice

Preparation

  1. Chop the red onion, garlic, eggplant, bell peppers, and sweet potato

  2. Sauté the chopped onion and garlic in a large pot with oil over medium heat until softened

  3. Add the eggplant, bell peppers, and sweet potato, and cook for a few minutes until slightly tender

  4. Stir in the ground cumin, coriander, smoked paprika, salt, and pepper

  5. Add the tomato paste and water, and bring to a simmer

  6. Mix in the vegan ground beef and cooked lentils, and simmer for 20-30 minutes until flavors are blended and vegetables are tender

  7. Serve garnished with fresh coriander, sliced avocado, and a squeeze of lime juice
