Hearty Vegan Chili with Vegetables
Ingredients
- Vegan ground beef
- Cooked lentils
- Red onion
- Garlic
- Eggplant
- Red & yellow bell pepper
- Sweet potato
- Ground cumin, coriander and smoked paprika
- Pepper and salt
- Tomato paste
- Water
- Fresh coriander
- Avocado
- Lime juice
Preparation
Chop the red onion, garlic, eggplant, bell peppers, and sweet potato
Sauté the chopped onion and garlic in a large pot with oil over medium heat until softened
Add the eggplant, bell peppers, and sweet potato, and cook for a few minutes until slightly tender
Stir in the ground cumin, coriander, smoked paprika, salt, and pepper
Add the tomato paste and water, and bring to a simmer
Mix in the vegan ground beef and cooked lentils, and simmer for 20-30 minutes until flavors are blended and vegetables are tender
Serve garnished with fresh coriander, sliced avocado, and a squeeze of lime juice
