Healthy Buddha Bowl with Miso Tahini Dressing

Ingredients

  • bamboo rice
  • spiralized zucchini
  • spiralized carrots
  • red cabbage
  • avocado
  • cilantro
  • tahini
  • miso
  • water
  • lemon juice
  • garlic
  • fresh cilantro
  • salt
  • pepper
  • olive oil

Preparation

  1. Blend together one part tahini, one part miso, around two parts water or more, juice of one lemon, garlic, fresh cilantro, salt and pepper to taste, and a bit of olive oil to taste to make the dressing.

  2. Assemble the Buddha bowl by combining bamboo rice, spiralized zucchini, spiralized carrots, red cabbage, avocado, and cilantro.

  3. Top the bowl with the prepared dressing.
