Roasted Sweet Potato Vegan Bowl

Ingredients

  • Sweet potato
  • Olive oil
  • Salt
  • Pepper
  • Broccoli
  • Kale
  • Coconut oil
  • Avocado
  • Hummus
  • Sesame seeds

Preparation

  1. Preheat oven to 160°C

  2. Slice and roast sweet potato with olive oil, salt, and pepper for 45 minutes.

  3. Wok fry broccoli and kale in coconut oil.

  4. Serve with avocado, hummus, and sesame seeds.
