Roasted Sweet Potato Vegan Bowl
Ingredients
- Sweet potato
- Olive oil
- Salt
- Pepper
- Broccoli
- Kale
- Coconut oil
- Avocado
- Hummus
- Sesame seeds
Preparation
Preheat oven to 160°C
Slice and roast sweet potato with olive oil, salt, and pepper for 45 minutes.
Wok fry broccoli and kale in coconut oil.
Serve with avocado, hummus, and sesame seeds.
