Roasted Sweet Potato Buddha Bowl with Tahini Dressing

Ingredients

  • 1 sweet potato
  • 1/4 red onion
  • 1/2 tbsp olive oil
  • 1 can chickpeas
  • 1/2 tbsp olive oil
  • 1 tsp cumin
  • 3/4 tsp chili powder
  • 3/4 tsp garlic powder
  • 1/4 tsp salt
  • 1/2 tsp oregano
  • 1/2 tsp turmeric
  • Black pepper
  • Cooked quinoa
  • Lettuce
  • Avocado

Tahini dressing

  • 1/4 cup tahini
  • 3 tbsp warm water
  • Juice of 1 lemon
  • 1/2 tbsp maple syrup

Preparation

  1. Roast both potatoes and chickpeas at 400 for 20 mins.

  2. Add in cooked quinoa, lettuce, avocado, and any other toppings.

  3. For the tahini dressing, combine 1/4 cup tahini, 3 tbsp warm water, juice of 1 lemon, and 1/2 tbsp maple syrup.
