Roasted Sweet Potato Buddha Bowl with Tahini Dressing
Ingredients
- 1 sweet potato
- 1/4 red onion
- 1/2 tbsp olive oil
- 1 can chickpeas
- 1/2 tbsp olive oil
- 1 tsp cumin
- 3/4 tsp chili powder
- 3/4 tsp garlic powder
- 1/4 tsp salt
- 1/2 tsp oregano
- 1/2 tsp turmeric
- Black pepper
- Cooked quinoa
- Lettuce
- Avocado
Tahini dressing
- 1/4 cup tahini
- 3 tbsp warm water
- Juice of 1 lemon
- 1/2 tbsp maple syrup
Preparation
Roast both potatoes and chickpeas at 400 for 20 mins.
Add in cooked quinoa, lettuce, avocado, and any other toppings.
For the tahini dressing, combine 1/4 cup tahini, 3 tbsp warm water, juice of 1 lemon, and 1/2 tbsp maple syrup.
