Buddha Bowl with Roasted Veggies and Tahini Dressing

Ingredients

  • sweet potato
  • zucchini
  • asparagus
  • tofu
  • greens
  • red pepper
  • avocado
  • noodles
  • Dukkah

Tahini dressing

  • 3 heaping tbsp tahini
  • 1 clove garlic smashed and finely minced
  • 1 tsp maple syrup
  • 1/2 lemon juiced
  • Water to thin
  • Sea salt and pepper

Preparation

  1. Roast sweet potato, zucchini, asparagus, and tofu in the oven until tender

  2. Mix together tahini, minced garlic, maple syrup, and lemon juice.

  3. Use warm water to thin the dressing to desired consistency and season with sea salt and pepper.

  4. Combine raw vegetables like greens, red pepper, and avocado with noodles in a bowl.

  5. Add the roasted items and tahini dressing to the bowl, then sprinkle with Dukkah
