Brown Rice Vegetable Bowl with Tahini Sauce

Ingredients

  • brown rice curls
  • black beans
  • spinach
  • kale
  • beet sauerkraut

Tahini sauce components

  • ~1 tablespoon tahini
  • a few shakes garlic powder
  • juice of 1/3 lemon
  • lemon zest to taste
  • water as needed

Preparation

  1. Combine approximately 1 tablespoon tahini, a few shakes of garlic powder, juice from one-third of a lemon, lemon zest to taste, and enough water to thicken. Stir until smooth.

  2. Assemble the bowl by combining brown rice curls, black beans, spinach, kale, and the prepared tahini sauce in a bowl. Add beet sauerkraut on the side.
