Roasted Zucchini and Basil Hummus

Ingredients

  • 1 large zucchini
  • 2 big handfuls of basil
  • 1 can of chickpeas, drained and peeled
  • 2 tbsp tahini
  • 1 lemon, juiced
  • 1 garlic clove
  • Salt, pepper and olive oil

Preparation

  1. Preheat oven to 190°C

  2. Chop and roast the zucchini for 30 minutes in the oven.

  3. Peel the chickpeas and garlic and put them in the food processor.

  4. Add the roasted zucchini and all other ingredients.

  5. Blitz the mixture.

  6. Add water to loosen.

  7. Season and drizzle with olive oil.
