Roasted Sweet Potato and Lentil Bowl with Veggies
Ingredients

- sweet potatoes
- brussels sprouts
- olive oil
- garlic powder
- paprika
- salt
- pepper
- avocado
- hummus
Preparation
Cook lentils while preparing the vegetables.
Coat sweet potatoes and brussels sprouts in olive oil.
Season brussels sprouts with garlic powder, salt, and pepper.
Season sweet potatoes with paprika, salt, and pepper.
Roast for 25 minutes at 425 degrees Fahrenheit; add extra time for large sprouts if needed.
Divide cooked lentils and roasted vegetables into bowls.
Add avocado and a few tablespoons of hummus.
