Roasted Veggies and Tempeh Nourish Bowl
Ingredients
- carrot
- asparagus
- broccoli
- grape tomatoes
- spinach
- avocado
- tempeh
- quinoa
- cashew sour cream
- olive oil
- salt
- pepper
- garlic powder
Preparation
Wash and cut your veggies and add them to a baking sheet with olive oil, salt, pepper, garlic powder and mix it all together. Bake for at 450F for 25 minutes or till veggies are softened.
Cook your quinoa in the mean time or reheat if already made.
Fry the tempeh with spices and seasoning.
Flash fry tomatoes on the frying pan so they soften.
Prepare bowl with quinoa at the bottom then add veggies and tempeh on top with avocado. Drizzle your fav sauce I used a cashew sour cream all over.
