Sweet Potato Bowl with Bulgur Salad
Ingredients
- 1-2 sweet potatoes (8-900g)
- 1/3 cup olive oil
- 1 clove garlic (can be omitted)
- 1/2 tablespoon chili (can be omitted)
- 1 tablespoon thyme and rosemary
- 1 tablespoon maple syrup
- Salt and pepper
- Spinach
- Avocado
- Hummus
- Couscous
Preparation
Preheat the oven to 220°C (425°F)
Wash the sweet potatoes thoroughly
Cut in thin long slices (with skin)
Mix oil, garlic, chili, thyme, rosemary, maple syrup, salt and pepper well together
Add on top of the potatoes and mix well
Place on a baking tray and bake for 15-20 minutes, then flip and bake for 15-20 minutes more
Serve with spinach, avocado slices, hummus, couscous and drizzle with sesame seeds
