Sweet Potato Bowl with Spinach Avocado Hummus
Ingredients
- 1-2 sweet potatoes (8-900g.)
- 1/3 cup olive oil
- 1 clove garlic (optional)
- 1/2 tablespoon chili (optional)
- 1 tablespoon thyme and rosemary
- 1 tablespoon maple syrup
- salt and pepper
- spinach
- avocado
- hummus
- couscous
- sesame seeds
Preparation
Preheat the oven to 220°C (425°F).
Wash the sweet potatoes thoroughly.
Cut into thin long slices (with skin).
Mix oil, garlic, chili, thyme, rosemary, maple syrup, salt and pepper well together.
Add on top of the potatoes and mix well.
Place on a baking tray and bake for 15-20 minutes.
Flip and bake for another 15-20 minutes.
Serve with spinach, avocado slices, hummus, couscous and drizzle with sesame seeds.
