Sweet Potato and Lentil Spinach Salad with Avocado and Feta

- Tessemae's organic balsamic dressing
- sweet potatoes
- olive oil
- paprika
- salt
- pepper
- avocado
- canned lentils
- feta cheese
Preparation
Roast sweet potatoes at 425°F for 30 minutes with olive oil, paprika, salt, and pepper.
Toss spinach with balsamic dressing.
Top the dressed greens with roasted sweet potatoes, avocado, canned lentils, and crumbled feta.
Optionally, add toasted almonds for extra crunch if desired.
