Bacon, Avocado, and Roasted Corn Salad
Ingredients
Corn
- 1 15-ounce can corn
- 1/2 teaspoon paprika
- 1/2 teaspoon olive oil
- 1 teaspoon salt
Bacon
- 6 slices bacon
Salad components
- 3 avocados
- 1/4 cup chopped spinach
- 1/2 red onion, diced
- 2 tablespoons olive oil
- Juice of 2 limes
- 1 teaspoon garlic
- 1/2 teaspoon salt
- 1/2 teaspoon paprika
Preparation
Drain the corn and pat dry. Add to a bowl then add on the other corn ingredients. Mix together and bake at 425°F for 20 minutes, mixing it up halfway through.
For the bacon, I like to line a sheet with parchment paper for easy clean up. Bake at 425°F for 15 minutes.
Pat off some of the grease and break into pieces when it’s done.
Once those are done, add to a bowl.
In a small bowl, mix together the olive oil, lime juice, garlic, salt, and paprika. Use high quality olive oil for the tastiest salad!
Then add in cubed avocado, chopped spinach, and onion in with the corn and bacon. Mix together then drizzle with the olive oil mixture and stir up. Then enjoy!
