Avocado and Black Bean Salad

Ingredients

  • 2 avocados
  • 1 can black beans
  • 1 jalapeño
  • 1 celery stalk
  • 1/2 red onion
  • 1/4 cup sunflower seeds
  • 2 tbsp olive oil
  • Juice of 1/2 lemon or lime
  • 1 bunch cilantro

Seasonings

  • Taco seasoning blend or chili powder, garlic, cumin, smoked paprika, coriander, black pepper
  • Pinch of salt

Preparation

  1. Slice the avocados into bite-size pieces

  2. Drain and rinse the black beans

  3. Seed and dice the jalapeño small

  4. Dice the celery stalk

  5. Dice the red onion

  6. Chop the cilantro

  7. Combine all prepared ingredients, sunflower seeds, olive oil, lemon or lime juice, seasonings, and salt in a bowl

  8. Mix everything together thoroughly.
