White Bean Salad with Rosemary

Ingredients

  • 1 can cannellini beans, rinsed
  • 1/2 cup red onion, chopped
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon olive oil or grapeseed oil
  • 2 tablespoons red wine vinegar
  • Salt and pepper to taste

Preparation

  1. Rinse and drain the cannellini beans

  2. Add the chopped rosemary, red onion, oil, vinegar, salt and pepper and mix well

  3. Let sit at room temperature or refrigerated for at least 20 minutes for the flavors to meld

  4. Serve as a side dish or with slices of grilled bread
