White Asparagus Salad with Lemon Dressing
Ingredients
- 8-10 white asparagus
- 1 lemon slice
- Pinch of sugar
- Salt, pepper
- Juice of 1/2 lemon
- 2 tablespoons vinegar
- 4 tablespoons olive oil
- Red pepper
- 1/2 red paprika
Preparation
Peel the ends of the asparagus
Cook the asparagus with a pinch of sugar, a slice of lemon and a pinch of salt for about 8-15 minutes (depending on the asparagus)
Cool down with cold water
Mix olive oil, vinegar, lemon juice, salt and pepper
Add half of the sauce on a plate, add the asparagus on top
Add the rest of the sauce on top
Grind red pepper flakes and sprinkle on top
Chop the paprika into tiny pieces
Sprinkle on top of the asparagus
