Simple Lemon Coriander Asparagus
Ingredients
- 10 white asparagus
- Handful cilantro
- Couple of lemon zest stripes
- Pinch of sugar
- Salt and pepper
- Juice of 1/2 lemon
- 2 tablespoons vinegar
- 1/2 teaspoon chili flakes
- 4 tablespoons olive oil
Preparation
Chop off the ends of the asparagus and peel them.
In a pot, cook the asparagus with lemon zest, sugar, and a pinch of salt for about 10-14 minutes.
Cool the cooked asparagus down with cold water.
In a mixing bowl, combine olive oil, chili flakes, vinegar, lemon juice, salt, and pepper to create a sauce.
Spread half of the sauce on a plate.
Arrange the cooked asparagus on top of the sauce.
Drizzle the remaining sauce over the asparagus.
Chop the cilantro and sprinkle it on top.
