Simple Lemon Coriander Asparagus

Ingredients

  • 10 white asparagus
  • Handful cilantro
  • Couple of lemon zest stripes
  • Pinch of sugar
  • Salt and pepper
  • Juice of 1/2 lemon
  • 2 tablespoons vinegar
  • 1/2 teaspoon chili flakes
  • 4 tablespoons olive oil

Preparation

  1. Chop off the ends of the asparagus and peel them.

  2. In a pot, cook the asparagus with lemon zest, sugar, and a pinch of salt for about 10-14 minutes.

  3. Cool the cooked asparagus down with cold water.

  4. In a mixing bowl, combine olive oil, chili flakes, vinegar, lemon juice, salt, and pepper to create a sauce.

  5. Spread half of the sauce on a plate.

  6. Arrange the cooked asparagus on top of the sauce.

  7. Drizzle the remaining sauce over the asparagus.

  8. Chop the cilantro and sprinkle it on top.
