15 Minute Meal Idea
Ingredients
- 2 medium sweet potatoes or 1 large
- 1 avocado
- 1/2 cup cherry tomatoes
- 1-2 cups quinoa (tj’s frozen quinoa is gold)
- 1 cup frozen edamame beans
- 2 shallots, sliced
- 1 lemon, juiced
- 2 tbsp olive oil
- salt to taste
- optional garnishes:
- fresh herbs such as cilantro or parsley
- romesco sauce
Preparation
Toss quinoa in the microwave and heat up as instructed
Cut sweet potatoes into thick (about a quarter inch) toast-like slices. Brush with olive oil, sprinkle salt and toast in oven toaster or toaster for 3-4 minutes or until cooked
Defrost your edamame beans by placing them in a bowl filled with hot or warm water
Dice cherry tomatoes into quarters. Dice shallots, slice avocados and prep fresh herbs
Place sweet potato “toasts” or slices on plate and add romesco sauce on top (optional)
Add quinoa, beans and all other ingredients on top. Squeeze lemon juice, drizzle olive oil and sprinkle salt on top. Ta-da
