Loaded Burrito Bowl

Ingredients

  • black beans
  • quinoa
  • corn
  • avocado
  • kale
  • pickled red onions
  • cashew cream
  • tortilla chips
  • black beans:
  • can of black beans
  • 1/2 cup water
  • salt
  • garlic powder
  • chili powder
  • onion powder
  • cumin
  • 1 cup cashews
  • 1 cup water
  • 1 lemon juiced
  • pinch of salt
  • large bunch of kale
  • splash of water
  • salt
  • garlic powder

Preparation

  1. In pan add rinsed beans, add water & spices, mix, cover with lid on medium heat till water is absorbed

  2. Blend everything in blender till smooth

  3. Add kale to pan with water and spices till it welts down a little bit
