Loaded Burrito Bowl
Ingredients
- black beans
- quinoa
- corn
- avocado
- kale
- pickled red onions
- cashew cream
- tortilla chips
- black beans:
- can of black beans
- 1/2 cup water
- salt
- garlic powder
- chili powder
- onion powder
- cumin
- 1 cup cashews
- 1 cup water
- 1 lemon juiced
- pinch of salt
- large bunch of kale
- splash of water
- salt
- garlic powder
Preparation
In pan add rinsed beans, add water & spices, mix, cover with lid on medium heat till water is absorbed
Blend everything in blender till smooth
Add kale to pan with water and spices till it welts down a little bit
