Nutrition-Packed Quinoa Chili

Ingredients

  • 250ml quinoa (approximately 1 cup)
  • 500ml water (approximately 2 cups) (add more if necessary)
  • 2 tsp liquid smoke
  • 1/4 tsp ginger powder
  • 1/4 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/4 tsp cumin
  • 1 tbsp soy sauce
  • 1/4 tsp onion powder
  • Salt and pepper
  • 400ml crushed tomatoes
  • 1 red bell pepper
  • 1 onion
  • 1 can black beans (225g)
  • 1 can soybeans (225g)
  • 1 can sweet corn (200g)
  • 3 grated carrots
  • Cocktail tomatoes

Preparation

  1. In a pot, add the quinoa (rinse it a few times in water first). Add the water and bring to a simmer.

  2. Add the spices (liquid smoke, ginger, chili, paprika, cumin, onion, salt, and pepper).

  3. Grate the carrots. Chop the bell pepper. Dice the onion if using. Halve the tomatoes.

  4. Once the water has begun to be absorbed by the quinoa, add the crushed tomatoes, soy sauce, bell pepper, onion, beans, corn, grated carrots, and cocktail tomatoes. Optionally, add some sweet potato.

  5. Mix everything together and allow it to simmer for 10-15 minutes.

  6. Once all the flavors are combined and you're happy with the taste, it's ready to eat and enjoy!
