Mouthwatering Burrito Bowl

Ingredients

  • 2 cups quinoa
  • 2 cans black beans
  • 1 cup cherry tomatoes
  • 1/2 cup diced onion
  • 1 1/2 cup diced bell peppers
  • 2 avocados
  • 1 large handful cilantro
  • 2-3 juicy limes
  • 1/2 cup veg broth
  • 1 tsp cumin
  • 1 tsp garlic powder
  • salt and pepper to taste

Preparation

  1. Cook quinoa by reading instructions on box/bag

  2. Use vegetable broth instead of quinoa for added flavor

  3. While quinoa is cooking use a large pan to sauté onions and bell peppers in vegetable broth

  4. Once veg broth dries up add a few more splashes and repeat until cooked/caramelized

  5. Prep cilantro, cherry tomatoes and cut limes meanwhile

  6. Open cans of black beans, drain and rinse

  7. Add quinoa and black beans to pan with onions and peppers

  8. Add garlic powder, cumin, salt and pepper and simmer together for 5-7 minutes

  9. Serve in a bowl and add tomatoes, avocado, cilantro and lots of lime juice

  10. Eat with corn tortillas or tortilla chips, enjoy!

  11. If meal prepping avoid adding tomatoes, cilantro, lime juice and avocado until the day of for freshness
