Healthy Nourish Bowl with Pesto and Quinoa

Ingredients

  • grilled veggies: broccoli, yellow bell pepper, asparagus, zucchini, potato
  • kale
  • quinoa
  • chickpeas
  • hemp basil pesto
  • avocado
  • pumpkin seeds

Pesto

  • 1 packed cup fresh basil
  • 2/3 cup hemp hearts
  • 1/3 cup evoo
  • 1/4 cup water
  • 1 lemon juiced
  • 2 large garlic cloves
  • pinch of salt

Preparation

  1. Grill veggies on bbq with oil, salt, pepper, garlic powder.

  2. Cook quinoa according to box directions.

  3. Rinse chickpeas, add to hot pan with avocado oil, salt, pepper and garlic powder. Cook till they get crispy.

  4. Prep kale cut up thin.

  5. Make pesto, add all ingredients into blender till smooth.

  6. Assemble the bowl with each section then drizzle pesto on top, add avocado slices and sprinkle seeds.
