Autumn Roasted Vegetable Bowl

Ingredients

  • kale
  • sweet potato
  • delicata squash
  • chickpeas
  • avocado
  • pumpkin seeds
  • hemp seeds
  • balsamic glaze
  • lemon juice

Preparation

  1. Roast sweet potato and delicata squash in oven until tender

  2. Sauté kale and chickpeas in a pan until cooked

  3. Prepare dressing by mixing balsamic glaze and lemon juice
