Garlic Scape and Kale Pesto with Zoodles
Ingredients
- 6-8 garlic scapes
- 1 cup kale
- 1 cup fresh basil
- 1/4 cup pumpkin seeds
- 1/4 cup hemp hearts or more seeds
- Juice of 2 lemons
- Salt and pepper
- 2 cloves of garlic, optional
- 1/4 cup water
Preparation
Add all ingredients to a food processor or blender, except the water. Process until smooth.
Add 1 tablespoon water at a time and blend more until desired consistency.
Toss with cooked pasta, raw spiralized zucchini or a mix of both. Enjoy alone, or sprinkled with more veggies.
