Garlic Scape and Kale Pesto with Zoodles

Ingredients

  • 6-8 garlic scapes
  • 1 cup kale
  • 1 cup fresh basil
  • 1/4 cup pumpkin seeds
  • 1/4 cup hemp hearts or more seeds
  • Juice of 2 lemons
  • Salt and pepper
  • 2 cloves of garlic, optional
  • 1/4 cup water

Preparation

  1. Add all ingredients to a food processor or blender, except the water. Process until smooth.

  2. Add 1 tablespoon water at a time and blend more until desired consistency.

  3. Toss with cooked pasta, raw spiralized zucchini or a mix of both. Enjoy alone, or sprinkled with more veggies.
